With spring time air comes the desire to be outside. As much as is possible. Whether you stay close to home, or hit the trail, don’t forget to pack a snack! We always remember to bring something along. This weekend I made these Sun flowerpower balls. I almost called them “Not-so-Nut Balls” but Sun Flowerpower Balls looked better to me and seemed a better play on words. Rolled in unsweetened coconut, they may just fool the eye: you may think you are a looking at a chocolate coconut donut hole. Don’t be fooled. These little power houses have no nuts, a scant amount of sugar and are great on-the-go treats! The container and tumbler are both from Ukonserve.
Here’s the recipe:
6 pitted and chopped Medjool dates
3/4 cup old fashioned oats
2 tbs coconut sugar
1 tbs ground flax seed
1 tbs chia seeds
1 tbs cacao powder
1/2 cup unsweetened sunbutter (I used Trader Joe’s)
1/3 cup sunflower seeds
1/8 cup coconut oil melted and slightly cooled
1/4 miniature chocolate chips
1/4 cup unsweetened coconut shreds plus more for dusting
Place the dates in the bowl of a food processor and chop with the blade attachment until the dates are all mixed and nearly all stick together to form a ball. Add in all but the last two ingredients. Pulse several times until all the ingredients are well incorporated. Finally, add in the chips and the coconut. Pulse one more time. Next, place a large sheet of parchment paper out on the counter. Take a heaping tablespoon of the mixture out into your hands a form a ball. The warmth of your hand will make the “batter” stick together. If it is to dry and crumbles, add a small amount more of coconut oil to get the right consistency. Lastly, coat the balls in shredded coconut flakes to give them a little pizzazz. Store the balls in an airtight container in the fridge. This recipe made about 10 balls.
