Spring time is time for micro greens

Considering it was 11 degrees when I woke up this morning, I realize that spring is still a ways off. But looking back at a picture I took last spring, I am getting excited at least for the thought of spring! Mixing a warm roasted vegetable like I did here with a cool spring mix micro green is like mixing the chilled mornings with the warm spring afternoons. It’s an unusual match, but so delicious!
