It is hard to imagine that the Chocolate Chip Cookie has only been around since the 1930s. It was an instant success and I don’t know of many people who don’t like them.
Eating too many however, can have some effects to the beltline, so I was curious to find a recipe that was most if not all of the following:
- Gluten Free
- And preferably, a One Bowl Wonder
Ideally, the family wouldn’t mind if I swap out the traditional flour for almond flour right? Well…thanks to this recipe I found on Gathered Nutrition.com I can say I found one that checks all the boxes. Finding the perfect chocolate chip is also very important. You want one that is not too sweet and not too bitter, with just the right amount of melted goodness.
The other amazing thing about this recipe is that it only yields about 12 cookies or so. This is perfect for our small family. It is not necessary for us to have 40 cookies laying about the house. (That is only allowed during Girl Scout Cookie selling season!)
A touch of Maldon sea salt flakes sprinkled on top when they are still warm is the finishing touch on this recipe!
My family is very tough on acceptable food that is anything Paleo, Gluten Free, or anything along those lines. But this cookie passed all the tests. This will no doubt be going into everyone’s lunch box come fall, including mine!!! Heck, why not enjoy it with coffee too?
